Homemade Coconutty Lara Bars

Thanksgiving is days away!  What a wonderful time to reflect on all the blessings we have and share over amazing food and fellowship.  Amidst the cooking, prepping, list making, and grocery shopping you may find yourself forgetting to have snacks to fuel your own body.  As I was prepping my pies, I realized I needed some go-to snacks for this week, especially  since we are traveling out of town with our little guy for a few days.

Lara bars are very popular right now because they are made with simple ingredients and no additives.  

Sadly, they are not cheap and can really hurt the budget if they become a regular go-to snack.  That’s why in this post, we are making our own, and we are using one of my favorite kitchen essentials, The Vitamix, to blend up the delicious bars.  

What you need:

These bars are simple: Medjool Dates, Walnuts, Almonds and Coconut flakes.  That’s it?  Yes, that’s it!

You will also need to use a very high powered blender (I recommend the Vitamix) or a food processor to combine the ingredients well.  You will also need a sturdy rubber scraper or small spatula to spoon out the mixture.

First, halve the dates with a knife and remove the pit.  It should look like this:

Do the same with 20 dates total and throw them in the Vitamix or food processor.  Pulse on 2 or 3 until the dates mix together well.  Use a spatula to mix if necessary.

Add in almonds, walnuts, and coconut flakes.  You will need to mix it in with a spoon/spatula to combine well.

Now, take that spatula and empty contents onto a cutting board.  Combine more by hand if needed.  

Place in an 8×8 glass container and spread flat.

I don’t mind a few chunks of nuts in my mix as you can see here.  Yum, yum!

Freeze for 30 mins and then cut into 4×4 “brownie” size pieces.  

These make a great energy snack for on the go or at home.  You can wrap them individually or keep them in the pan.  They will last longer in the fridge or freezer.

20 Medjool Dates

1 Cup Coconut Flakes

1/2 Cup Almonds

1/2 Cup Walnuts

  1. Halve and pit 20 Medjool Dates and throw in the Vitamix.  Pulse at 2 or 3 setting until mixed well.
  2. Throw in coconut flakes, almonds, and walnuts and mix in gently with spoon/spatula.  Pulse again until mixed together.
  3. Spoon out mixture into 8×8 glass pan and flatten.
  4. Freeze for 30 minutes.  Cut into 4×4 brownie size pieces and take on the go!
