Apple Butter Vinaigrette

Last night I realized that I had made quite an abundance of apple butter and needed to figure out what to do with it. I love having friends that have their own apple trees and like to share! In one crockpot I made this much apple butter:

Unless I plan to eat toast and apple butter for the rest of this fall, I knew I needed to get creative. So I thought, what do we eat most of in our house? Healthy, delicious salads. I am running low on good dressings, so I decided to make an apple butter vinaigrette. 

A quick Google search gave me several options. In order to fill up my container I doubled a recipe, and adjusted it slightly to my liking. Here is what I came up with: 

Apple Butter Vinaigrette 

  • 1 Cup Apple Butter
  • 6 Tbsp Olive oil
  • 2 Tbsp Apple Cider Vinegar
  • A few shakes of freshly ground pepper

I combined everything in the Vitamix so it would be smooth and it turned out fantastic! Add a little lemon juice or lemon essential oil for a bit of a zing 🙂

So, if you have any apple butter on hand from a recent trip to an orchard, or if you get around to making it yourself, try this vinaigrette–a perfect autumn pairing to any salad.
